One of the most popular products of oriental cuisine and an indispensable component in the preparation of rolls or sushi is for rolls. It is thanks to this that the dish acquires a special taste, and the presence of glutamic acid derivatives will clearly highlight the taste. It looks dark in color and has a special pungent odor.

Sauce for sushi and rolls comes in several forms:

For rolls. Pairs perfectly with fish dishes. Made from plums, pineapples, ketchup and soy sauce.

- “Teriyaki”. This is a delicious dressing for rice rolls and sushi. Made from soy sauce, sake, spices and honey. Can also be used as a marinade.

Okonomiyaki sauce for rolls and sushi. It is a soy product with the addition of spices, powdered sugar and starch.

Soy sauce is a product of weak fermentation of soybeans and is produced according to an unchanged old recipe. Its preparation is very similar to the preparation of wine, because in both cases it is based on the process of natural fermentation. Method of preparation: add evaporated wheat grains to the roasted and ground wheat grains and mix everything. The resulting mixture is salted and filled with water. Afterwards it is placed in special bags in the sun. They do this for natural fermentation. The bags are environmentally friendly and made of special material. The whole process is quite long and can take about a year. Slowly draining, the liquid is collected in appropriate containers. It is then filtered and bottled into specially designed bottles. Today this method is practically not used, as it is very long and labor-intensive. Thanks to modern fermentation technologies, it can be accelerated by adding aspergillus bacteria to the still dry mixture. They will speed up the fermentation process by 10-15 times. This method allows you to reduce 1 year to 1 month. Enzymes that break down soy protein during the fermentation of wheat starch produce sugar. It gives a sweet taste to the finished product, which adds the piquancy that is so loved in the Land of the Rising Sun.

Despite the fact that there are many methods for its production in the world, the method of natural fermentation always underlies the preparation of a natural product. Soy sauce is not only tasty, but also very healthy; it contains many different vitamins, dozens of mineral elements and amino acids. It significantly reduces the risk of cardiovascular diseases and cancer, increases immunity and improves blood circulation.

Many people simply adore Japanese cuisine and consider it their duty to learn how to cook it at home. You can learn this, although you will have to work a little. If you also consider yourself a sushi lover, try making baked rolls. There are several recipes and many useful tips that you should know.

How to make baked rolls

You should definitely acquire certain products and equipment. Baked rolls cannot be prepared without special rice, rice vinegar, nori seaweed, wasabi and spicy (hot) sauces and pickled ginger. Be sure to buy a special bamboo mat for molding products. Place a flat sheet of nori on it, glossy side down, and moisten it with water. Rice and filling are distributed on top. Then the roll is carefully rolled, cut, covered with spicy sauce and placed in the oven or microwave for a while.

Rice for sushi deserves special attention, with the preparation of which the process must begin. You can take a special one or an ordinary round one. Step-by-step cooking instructions:

  1. A glass of rice must be rinsed to clean water. You will need to repeat the procedure seven times.
  2. Pour the cereal into a large saucepan and add one and a half cups of cold water. Throw in a small strip of nori for flavor.
  3. Rice should be brought to a boil, and then immediately turn the heat to minimum. Pull out the seaweed. Cook for a quarter of an hour.
  4. Mix 50 ml of rice vinegar with 0.5 tsp. salt and 0.5 tbsp. l. Sahara. Keep this dressing on low heat until the grains dissolve.
  5. Remove the rice from the stove, leave covered for 10 minutes, and then transfer to a clay or wooden bowl. Pour in the dressing and stir at the same time with a wooden spoon. Always let it cool to room temperature.

Sauce for baked rolls

Without it, the dish cannot be called complete. There are many recipes for spicy sauce for pouring over baked rolls or adding inside, but ideally you should use the traditional one. To make it, mix a tablespoon of Japanese or ordinary, but very fatty mayonnaise with 50 grams of flying fish caviar. Add 10 ml soy sauce and a teaspoon of Kimchi spicy dressing. If you can’t find one, you can replace it with a similar amount of crushed chili pepper and garlic paste, taken in equal parts.

Japanese cuisine is incredibly diverse, which means there are a ton of different dishes you can make. Each recipe for baked rolls differs in what filling to put.   • cream cheese – 110 g;
  • flying fish caviar – 60 g;
  • nori – 3 sheets;
  • soy sauce – 10 ml;
  • garlic – 1 small clove;
  • Japanese mayonnaise – 45 g;
  • boiled rice – 270 g;
  • spicy ketchup - to taste;
  • smoked chicken – 215 g.

Cooking method:

  1. Mix mayonnaise with spicy ketchup and soy sauce. Add crushed garlic, flying fish caviar and 30 grams of cream cheese.
  2. Place the nori on the mat. With wet hands, spread the rice over it, leaving one edge free (1.5-2 cm).
  3. Cut the chicken into long strips. Place several of these slices of smoked meat on top of the rice.
  4. Place lumps of cream cheese along the chicken.
  5. Apply a little water to the free edge of the nori and roll it up.

Many housewives want to get this kind of crust when baking fish and other dishes in the oven. They are interested in the composition of the unusual seasoning, but it is not easy to detect. The problem is that “yaki” means “fried” in Japanese, and many seasonings used when baking or frying foods fall under this definition. The leader among them is spicy sauce, in which rolls are most often baked, but teriyaki sauce, which leaves a glossy glaze on the surface, also belongs to the same group of seasonings. Yaki sauce made according to this recipe is used for baking fish, chicken, and pork. The food can be marinated in it first. It is also known as teriyaki.

Yaki sauce for rolls

  • mayonnaise – 0.2 l;
  • chili pepper paste – 5 ml;
  • soy sauce – 30 ml;
  • flying fish caviar – 40 g.

Cooking method:

  • Add soy sauce to mayonnaise and whisk.
  • Add the pepper paste a little at a time, whisking the sauce and tasting it. Even if you like it spicy, it is recommended to limit yourself to a teaspoon of the savory product.
  • Add flying fish roe. If desired, you can replace it with canned cod or pollock caviar. It is even more reminiscent of carp caviar.
  • Whisk to obtain a homogeneous consistency.

  • sugar – 30 g;
  • lemongrass – 20 g (can be replaced with lemon zest);
  • apple – 40 g;
  • starch – 6 g;
  • ginger root – 8 g;
  • soy sauce – 100 ml;
  • mirin – 120 ml.

Cooking method:

  • Mix mirin or semi-sweet white wine with soy sauce.
  • Peel the apples. Cut the pulp into small cubes.
  • Finely chop or grate the zest.
  • Grind the ginger.
  • Place the soy sauce and wine mixture over low heat. Heat, stirring, until about a fifth has evaporated.
  • Add sugar, apples, zest and cook for 20 minutes.
  • Strain.
  • Return to the stove.
  • Dissolve the starch in a small amount of water and add to the sauce.
  • Boil it for 5 minutes, cool.

You can marinate chicken pieces in the sauce before baking or frying it. When chilled, the sauce can be served separately with dishes. This seasoning is also called yakitori sauce.

Ingredients:

  • butter – 1 tbsp. spoon;
  • garlic – 1/2 clove;
  • milk – 2 tbsp. spoons;
  • cream – 2 tbsp. spoons;
  • white mold cheese – 40 g.

Preparation

Fry the garlic in butter until fragrant. Pour milk, cream into the pan and add cheese. Cook the sauce until the cheese melts, then remove from heat and cool completely.

This European sauce can be used not only for sushi and rolls, but also as a dip for vegetables, or a creamy sauce for pasta.
