Required ingredients:

  • 0.5 kg minced meat:
  • 0.1 kg rice;
  • 1 egg;
  • 1 carrot;
  • 1 onion;
  • 100 g butter;

Stages of cooking “hedgehogs” in sour cream filling:

  1. We rinse the rice until it is clean, boil it, place it in a colander and rinse again, letting the excess liquid drain.
  2. Peel and chop the onions and carrots by hand or in a blender, fry them in half the oil.
  3. Beat the egg.
  4. Finely chop the greens.
  5. Add cooled rice, fried vegetables, tomato, egg, chopped herbs to the minced meat, add salt, pepper and mix thoroughly by hand.
  6. We form balls from the minced meat and fry them a little.
  7. Pour flour into a clean and dry hot frying pan, fry it until it acquires a golden hue, remove from heat, and cool. Separately mix sour cream with warm broth, pour the resulting mixture into the flour, stir until smooth, add salt.
  8. We put the “edges” in a deep form, not close to each other, and fill them with sauce. Bake in the center of a hot oven for about 45 minutes. Serve sprinkled with herbs, accompanied by vegetable salad.

Try to cook the minced meat yourself. If you buy store-bought, give preference to a chilled product rather than a deep-frozen one. We recommend that you purchase ready-made minced meat through a meat grinder one more time, otherwise you may end up with large pieces.

If you wet your hands in cool water before starting to form the “hedge”, the minced meat will not stick to your palms.

Steamed hedgehogs are a dietary version of your favorite dish. Once ready, they can be poured with low-fat sour cream diluted in water and simmered for about 5 minutes.

What you need for cooking:

  • Minced meat 1 kg.
  • Chicken egg 1 pc.
  • Onions 1 pc.
  • Dry rice 170 gr.
  • Sour cream (fat content 15-20 percent) 150 gr.
  • Tomato paste 3 tbsp. l.
  • Dried herbs.
  • Salt, spices to taste.
  • Fresh greens.
  • Sugar 1 tsp.
  • Vegetable oil.

Sequencing:

  • Boil the rice in lightly salted water until half cooked. Then drain it in a colander and wait until the water has completely drained and the rice has cooled.
  • Place the minced meat in a separate bowl and add egg, rice, salt, dried herbs and spices to taste. Mix everything thoroughly. Make small hedgehogs from the prepared minced meat.
  • Peel the onions and carrots. Cut the onion into small cubes, grate the carrots on a fine grater. Fry the hands with carrots in vegetable oil until fully cooked.
  • Mix sour cream with tomato paste. Then add salt, sugar, spices and fried onions and carrots to them.
  • Grease a baking sheet with vegetable oil and place the hedgehogs on it, pour the resulting sauce over them. Cover the baking sheet with foil and place it in an oven preheated to 180-200 degrees for 30-40 minutes.
  • Chop fresh herbs and sprinkle them over the cooked hedgehogs.

Minced hedgehogs in a slow cooker

What you need for cooking:

  • Minced meat 600-700 gr.
  • Dry rice 100 gr.
  • Onions 1 pc.
  • Medium sized carrots 1 pc.
  • Red pepper 1 pc.
  • Chicken egg 1 pc.
  • Sour cream 6 tbsp. l.
  • Tomato paste 3 tbsp. l.
  • Flour 2 tbsp. l.
  • Water 200 ml.
  • Salt, spices to taste.

Sequencing:

  • Peel the onions and carrots, remove the seeds from the peppers. Grate the carrots on a coarse grater, finely chop the onion and pepper. Turn on the “Fry” mode and fry the onions, peppers and carrots in vegetable oil.
  • Rinse the rice under cool water and boil it until half cooked.
  • Place the minced meat in a separate bowl and add rice boiled until half cooked, a chicken egg and 1 tablespoon of sour cream, spices and salt. Mix everything thoroughly. Form the minced meat into hedgehogs.
  • Mix 5 tablespoons of sour cream with tomato paste, flour and water, add salt to taste and mix everything thoroughly. Add vegetables to the resulting sauce.
  • Grease the bottom of the multicooker bowl with vegetable oil and place the hedgehogs in it and pour the resulting sauce over them.
  • Turn on the “Stew” mode and cook the hedgehogs until fully cooked.


Dietary hedgehogs made from minced meat

What you need for cooking:

  • Minced chicken 600-700 gr.
  • Dry rice 100 gr.

Meat hedgehogs with rice - general principles of preparation

Any meat is suitable for preparing meat hedgehogs: veal, pork, chicken. Several types can be used. It is advisable to add at least a little fat to the minced meat when rolling, so the hedgehogs will turn out juicier.

Any type of rice will do, as long as it is not steamed. Rice can be put into minced meat raw or semi-cooked, depending on your preferences and recipe.

In addition to rice and meat, onions are often added to the minced meat. It should either be finely chopped with a knife, or rolled through a meat grinder along with the meat. Spices and herbs are used to a minimum.

Large or medium-sized balls are formed from the finished meat mass. Hedgehogs are cooked by steaming, in a frying pan, in the oven or in a slow cooker, pouring sauce over them. You can pre-fry the meat balls with rice.

The sauce is a must; without it, the hedgehogs will not be as soft, juicy and tasty. The sauce is prepared using tomato paste, sour cream or vegetables.

1. Meat hedgehogs with rice

Ingredients:

Minced pork and beef - half a kilogram;

Long grain rice – 250 g;

A little tomato paste;

Egg – 1 pc.;

Onion head;

A glass of sour cream;

Chopped allspice black pepper – 30 g.

Cooking method:

1. Pour water over the washed rice cereal and boil over low heat until half cooked. Rinse with cold water in a colander.

2. Add an onion cut into small cubes, a chicken egg, salt and pepper to the prepared minced meat.

3. Place washed rice into the minced meat and stir thoroughly.

4. Form the prepared minced meat into balls approximately 3 cm in diameter.

5. Prepare the sauce: place a glass of sour cream and tomato paste in a thick-walled saucepan, pour in a little filtered water, salt and pepper (you can add a pinch of dry basil), stir well until a homogeneous liquid consistency.

6. Place the hedgehogs in a container with the prepared sour cream and tomato sauce, place on moderate heat and simmer for 40 minutes.

Ingredients:

Half a kilo of any minced meat (can be chicken);

Rice cereal – 250 g;

Medium onion head;

Sweet pepper pod;

A few cloves of garlic;

A little oil for frying;

30 g sour cream;

Chopped black pepper and seasoning for meat - 20 g each;

Salt - a pinch;

Parsley - half a bunch.

1. Break an egg into the chopped meat and add washed raw rice.

Ingredients:

200 gram pieces of pork and beef;

250 g rice;

1 carrot;

Ground crackers - half a glass;

1 onion;

Parsley - half a bouquet.

For the sauce:

Ketchup and sour cream – 130 g each;

Salt - a pinch;

Ground hot and black pepper, seasoning for meat – 30 g.

Cooking method:

1. Twist the prepared meat through a meat grinder.

2. Break the egg into the minced meat, add the washed rice.

3. Add a little salt, pepper, and spices.

4. Chop the carrots, onions and parsley leaves with a knife, place in the minced meat, stir everything thoroughly until it has a tender consistency.

5. Form balls, sprinkle them with breadcrumbs, place them in a hot frying pan with oil and fry until golden brown.

4. Meat hedgehogs with rice in a slow cooker

Ingredients:

0.5 kg minced meat (pork and beef);

A little less than a glass of long grain rice;

Salt – 30 g;

1 carrot;

1 onion;

A few cloves of garlic;

3 medium tomatoes;

A little oil for frying;

Hot and ground black pepper, any spices for meat – 0.5 teaspoon each.

Cooking method:

1. Squeeze the garlic into the minced meat through a press, break the egg, pour in the washed rice, salt and pepper.

Ingredients:

Minced pork and beef – 500-600 g;

2 small carrots;

Onion head;

4 tbsp. spoons of long grain rice;

A small piece of cabbage;

Sour cream – 150 g;

Semolina – 30 g;

Tomato – 20 g;

Oil for frying.

Cooking method:

1. Cut two carrots and an onion into small cubes. Sauté in oil until softened.

2. Chop the cabbage into large strips.

3. Boil the washed rice in plenty of water for 10 minutes. Drain the water and rinse the rice.

4. Add tomato paste to fried carrots and onions and stir.

5. Add rice to the prepared minced meat, add semolina, break the egg, add salt and mix.

6. Form the prepared minced meat into balls with a diameter of 6 cm.

7. Place cabbage in the bottom of a deep frying pan or roasting pan up to one-third of the volume.

8. Place some fried carrots with onions and tomatoes on the cabbage, brush the surface with sour cream.

9. Place meat hedgehogs on sour cream.

10. Place the remaining cabbage on top.

11. The last layer will be fried vegetables with tomatoes.

12. Pour in 400ml lightly salted water and bring to the boil over high heat.

13. Then reduce the heat and simmer until all ingredients soften for about 40 minutes. Pour boiling water into the dish as needed during the stewing process.

Ingredients:

0.5 kg of any minced meat;

9 tbsp. spoons of any rice;

Dutch cheese - a small piece;

Salt, black pepper – a pinch;

Garlic – 4 cloves.

Cooking method:

1. Add an egg to the minced meat, a finely chopped onion, salt and pepper, add boiled rice, stir thoroughly.

2. Form balls, place them on a greased baking sheet, 1 cm apart.

The minced meat will not stick to your hands during the formation of hedgehogs if you periodically dip your palms in cool water.

Making a dietary version of the dish is simple: instead of frying or baking, choose steaming. Then transfer them to a frying pan and pour over the sauce made from low-fat sour cream and water, simmer for 5 minutes.
