Subtleties of cooking

  • It is better to cook minced chicken yourself. To prevent it from turning out liquid, be sure to blot the chicken fillet with a paper towel before turning it through a meat grinder.
  • To improve the taste, onions, garlic and various spices are added to the minced meat. In addition to the main ingredients, potatoes, cabbage and other vegetables are added to it. To prevent the cutlets from turning out pale due to the white meat of the chicken, you can add diced carrots, bell peppers, and herbs to the minced meat.
  • Onions passed through a meat grinder make the minced meat liquid. Therefore, it is better to cut it by hand or use a blender, turning on the device for only a few seconds.
  • An egg and bread soaked in milk (water) also make the minced meat liquid. To prevent this from happening, the semi-finished product must be thoroughly kneaded. Then the meat absorbs almost all the liquid and the minced meat becomes denser.
  • Adding semolina helps make minced chicken thicker. For half a kilo of ground meat you need to put one tablespoon of semolina, let it swell and only then start cutting the cutlets.
  • Steamed cutlets do not need breading. Since the minced meat is viscous and sticks to your hands, cutlets are formed with hands dipped in cold water and placed in a steaming container greased with vegetable oil.
  • Steam cutlets are cooked for 25-40 minutes, depending on the power of the multicooker. The mode is set to “Steaming”. To speed up the process, only pour hot water into the bowl. Of course, there should not be too much of it so that during boiling it does not reach the bottom of the container with the cutlets.

When baked, the meat juice soaks into the vegetables, making it very tasty! If potatoes are excluded from the menu for some reason, cook broccoli, cauliflower as a side dish, or make a salad of fresh vegetables.

Ingredients:

- chicken fillet (meat only, without skin) – 300 gr.;
- oatmeal – 3 tbsp;
- onion – 1 head;
- salt – in moderation;
- sweet paprika – 0.5 tsp;
- Provençal herbs – 2-3 pinches;
- water (boiling water) – 3 tbsp;
- potatoes, carrots - for garnish;
- spices, salt for garnish - to taste.

How to cook at home

Boil some water. Pour oatmeal into a bowl and pour boiling water over it for three to five minutes. Pour in a little water, about 3 tbsp. spoons, just enough to cover the cereal. If the flakes are regular (rolled oats), leave for about ten minutes until they become completely soft; instant flakes will soften in just a couple of minutes.

Grind the chicken fillet together with a small onion through a meat grinder or grind until smooth in a blender. Add salt (salt moderately), spices to your taste.

The oatmeal has already absorbed all the water and has softened. If there is any water left, drain it and add the flakes to the minced chicken. At the same stage, chopped herbs (dill, parsley) are added, but this ingredient is not required.

Mix the minced chicken thoroughly, beat it lightly so that the mass becomes sticky, viscous, and dense. Cutlets made from such minced meat will not spread. If the minced meat turns out runny, add a little breadcrumbs.

For garnish, steam vegetables. Cut peeled potatoes into slices or plates, carrots into thin slices. Place in a double boiler (or metal colander, sieve), salt, sprinkle with Provençal herbs for flavor.

Make small cutlets of any shape from minced chicken. Place on vegetables and cook until done.

After 15-20 minutes, the chicken cutlets will be ready. The color will change to a lighter color and the cutlets will lose a little volume. Be sure to check the readiness of the vegetables; they should become soft and easily pierced with a fork. I like these too
