They can become not only an appetizer or a full-fledged main course, but also a side dish for or. Only fresh cauliflower is suitable for making these pancakes, so make it before cabbage goes up in price. The amount of onions, fresh herbs, salt and spices can and should be adjusted to your taste. Additionally, you can add grated hard cheese or ham to the dough, it will turn out even more satisfying and tastier.

Ingredients:

  • 500 g cauliflower
  • 2 chicken eggs
  • 1 onion
  • 80 g wheat flour
  • 75 ml vegetable oil
  • 3-5 sprigs of fresh parsley
  • 0.5 tsp. table salt
  • 1 pinch ground black pepper
  • 1 pinch ground paprika

How to make cauliflower fritters:

Let's separate the cauliflower into small inflorescences.

Pour a sufficient amount of water into a small saucepan or saucepan, place the dish on the fire and bring to a boil. Then transfer the cabbage inflorescences to boiling water and boil them over medium heat for 5-7 minutes after boiling again. Place the boiled cauliflower in a sieve or colander to cool to room temperature.

Cut the boiled cauliflower into small pieces. Transfer the chopped vegetables into a deep bowl.

Peel the onion and cut into small cubes. Add the onion to the bowl with the cauliflower.

To make cauliflower pancakes even tastier and more aromatic, add finely chopped dill and parsley to the vegetables.

Beat two chicken eggs into the mixture.

Mix the dough thoroughly until all the ingredients are combined.

Heat odorless vegetable oil in a wide frying pan. Using a tablespoon, place the finished dough into the pan, forming round pancakes.

Fry the cauliflower pancakes over low heat until golden brown, 4-5 minutes. Then carefully turn the vegetable pancakes over and cook on the other side until cooked.

Place the finished cauliflower pancakes on a plate lined with paper napkins to remove excess oil. We will serve tender and tasty cauliflower pancakes with sour cream, ketchup or other favorite sauce. They are good both warm and chilled.

Moreover, there was a small fork of cauliflower at home,

and three small zucchini,

and a piece of hard cheese, in my case Russian, 200 grams (I should have put one and a half times more, but I simply didn’t have it in stock),

and even a glass of semolina (or wheat flour, whatever you find),

100 grams of sour cream (although the recipe called for thick kefir of the same volume),

and a heaping teaspoon of salt (don’t get carried away, the cheese itself is also salty),

I just had. This means there was no need to run to the nearest store for anything. Therefore, without wasting any time, I immediately started cooking.
Wash the zucchini and grate it directly with the skin on a coarse grater.

We grate our cheese on it,

and finely chop the cauliflower in a blender.

Mix all these ingredients, including semolina, sour cream and salt, and set aside for 15 minutes. Let the vegetables release their juice, the semolina will absorb it, and the mixture itself will become much more uniform in both taste and consistency.

Mix well again. Set the oven to preheat at 190 degrees, and in the meantime cover a baking tray with parchment paper,

and for 25 ... 35 minutes (more precisely - see for yourself) we set them to bake on the top shelf.
But I still have about half the base left for the zucchini and cauliflower pancakes. So I decided not to wait, but to fry the rest. So add two chicken eggs, mix well again,

and place future pancakes in a frying pan with heated vegetable oil. Over medium heat, fry on one side for three...five minutes,

then turn over and cook for another four minutes. We repeat.

Moreover, first of all, I managed to fry cauliflower and zucchini pancakes first in a frying pan (although there were three batches of them),

and only then those that were cooked in the oven.

Although they differed little from each other in taste and consistency, the oven version is much more dietary. But decide for yourself which one you prefer.

So, bon appetit.

The recipe can confidently be called budget-friendly, because the ingredients do not contain complex or expensive ingredients. Pour two liters of cold, clean water into a deep saucepan, place on the stove, bring to a boil and add salt. Place the cauliflower sprigs here.

Boil the cabbage until tender - they should become soft, and drain it in a colander. There is an important point: the inflorescences should be soft, but not overcooked and retain their shape.

Cool the cabbage and chop it finely. Not with a meat grinder or blender, but with a knife.

Now peel and cut the onion into small cubes.

Now place the onion in a deep bowl.

And add finely chopped cabbage inflorescences to it.

Beat the eggs into the onion and cabbage. If you don’t have large ones at hand, then three medium ones can easily replace them.
